It refers to a process for the preparation of iron (III) hydroxide and activated glucose syrup complexes comprising the following steps: (i) providing an aqueous glucose syrup solution with a dextrose equivalent (DE) of at least 21 and at most 60 as determined by gravimetric analysis at a temperature in the range of 25 ° C to 80 ° C and at a pH in the range of 6 to 13; (ii) add hydrogen peroxide and optionally a catalytic amount of an oxidation catalyst to solution (i),allowing the solution to cool to a temperature between 10 ° C to 45 ° C keeping the solution at this temperature for 5 minutes to 24 hours, obtaining activated glucose syrup; (iii) converting said activated glucose syrup into a complex with iron (III) hydroxide;and (iv) obtain a complex of iron (III) hydroxide and activated glucose syrup wherein the obtained complex has an iron content in the range of 27% to 35% by weight, based on the weight of the complex.
