PURPOSE: A producing method of plant material powder using the enzymatic treatment is provided to maintain or improve the functionality of plant materials in the original material state.CONSTITUTION: A producing method of plant material powder using the enzymatic treatment comprises the following steps: inserting water, protopectinase, and plant materials into a reactor stirring the mixture for relaxing plant cells, and centrifugal-separating the mixture to obtain precipitates adding water to the precipitates, and heating the mixture at 100 deg. C for 20-30 minutes for inactivating enzyme and freeze-drying and crushing the precipitates. 0.1%(w/v) of protopectinase is mixed with other ingredients in the reactor.
