PROBLEM TO BE SOLVED: To provide a spectrometry apparatus and a spectrometry method capable of nondestructively and highly accurately performing (measuring) an internal quality evaluation by accurately measuring surface shapes of fruits subject to a measurement.SOLUTION: The spectrometry apparatus comprises: shape specification means for measuring surface shapes of fruits; internal quality detection means for measuring internal qualities of the fruits; and an arithmetic processing unit connected to the shape specification means and the internal quality detection means. The arithmetic processing device measures the internal qualities of the fruits on the basis of the surface shape data of the fruits measured by the shape specification means and the internal quality data of the fruits measured by the internal quality detection means.
