The disclosure relates to a method of color preservation of meat or seafood selected from the group consisting of beef, pork, veal, lamb, mutton, goat, and game meat, wherein the method comprises the steps of: (a) storing meat or seafood in a sealed container containing a modified atmosphere packaging (MAP) gas comprising CO2 and CO and an optional inert gas selected from N2, Ar, Kr, Xe, or He and (b) before or simultaneous with said step of storing, the CO2 and CO of the modified atmosphere packaging gas are produced by applying an electric field to a processing gas comprising CO2 under conditions sufficient to generate non-thermal plasma comprising CO2 and CO, wherein the processing gas has an oxygen concentration of less than 10% vol/vol O2 and a CO2 concentration of at least 5% vol/vol wherein the non-thermal plasma is generated via corona discharge or via capacitive discharge.
