This invention provides a preparation method of a fermented beverage, which is characterized by comprising the steps of: adding an appropriate amount of fermenting material, first fermenting bacteria and auxiliary raw materials into a fermentation tank for first-stage fermentation, and after the first-stage fermentation is ended, carrying out filtration to obtain a first fermented liquid; adding second fermenting bacteria into the first fermented liquid for second-stage fermentation to obtain a second fermented liquid; and adding a flavoring agent into the second fermented liquid to adjust the flavor to obtain a fermented beverage.一種發酵飲料之製備方法,其特徵在於包括:於發酵槽中投入適量之發酵材料、第一發酵菌種、及副原料進行第一階段發酵,於第一階段發酵終了後,實施過濾而得到第一發酵液;於該第一發酵液中投入第二發酵菌種進行第二階段發酵而得到第二發酵液;於該第二發酵液中加入調味劑進行風味調整而得到發酵飲料。
