The present invention relates to a method for preparing a ginger-processed product having an excellent effect of alleviating asthma. More specifically, the method comprises the steps of: (a) steaming ginger at a temperature of 90-95°；C for 3-5 hours； (b) drying the steamed ginger at a temperature of 88-92°；C for 20-40 minutes and then drying the ginger at a temperature of 58-62°；C until a moisture content of the ginger is equal to or greater than 20%； (c) steaming the ginger, dried in the step (b), at a temperature of 90-95°；C for 2-4 hours； (d) drying the ginger, steamed in the step (c), at a temperature of 88-92°；C for 20-40 minutes and then drying the ginger at a temperature of 58-62°；C until the moisture content of the ginger is equal to or greater than 20%； (e) steaming the ginger, dried in the step (d), at a temperature of 90-95°；C for 1-3 hours； and (f) drying the ginger, steamed in the step (e), at a temperature of 88-92°；C for 20-40 minutes and then drying the ginger at a temperature of 58-62°；C until the moisture content of the ginger is equal to or greater than 10%. According to the present invention, ginger&prime；s unique strong taste and flavor are reduced through steaming and drying processes. In addition, it is possible to prepare the ginger-processed product which has excellent quality and can be used as a health functional food to prevent or alleviate inflammatory diseases including asthma as the ginger-processed product has effects of: suppressing generation of nitric oxide and PGE2 due to inflammation and expression of iNOS, COX2 and inflammatory cytokines, thereby having excellent anti-inflammatory activities； inhibiting concentration of inflammation-induced cells on the bronchoalveolar and elevation of IgE levels due to asthma； and suppressing inflammation occurring on the lung tissue and the expression of inflammatory cytokines occurring on the lung tissue due to asthma, thereby having excellent biological activities
