PROBLEM TO BE SOLVED: To provide a Maillard reaction inhibitor high in safety and administrable over a long period, as part of food waste utilization methods, and to provide foods/drinks, cosmetics, skin care preparations, food deterioration inhibitors and carcinogen production inhibitors, each containing the Maillard reaction inhibitor.
SOLUTION: The Maillard reaction inhibitor contains food waste or extract thereof, e.g. such matter as to be selected from buckwheat chaff, bean jam refuse, fermented food refuse, wine refuse extract, soy refuse water extract, etc. The foods/drinks, cosmetics, skin care preparations, food deterioration inhibitors and carcinogen production inhibitors, each containing the Maillard reaction inhibitor, are also provided, respectively.
