The present invention relates to a method for manufacturing solar salt, comprising a polyphenol and to the solar salt by the method. More specifically, the present invention comprises the following steps: mixing sap of Nypa fruticans into seawater； supplying the mixture to a salt pond； and gathering solar salt crystal by evaporating moisture form the mixture, supplied to the salt pond. According to the present invention, by containing various polyphenol and nutrients in the solar salt, the solar salt with a high quality can be manufactured. Also, by using deep sea water as the seawater, the present invention has an advantage of manufacturing the safe solar salt, without various contaminants such as heavy metals.본 발명은 폴리페놀을 함유한 천일염의 제조방법 및 그 방법에 의한 천일염에 관한 것으로, 더욱 상세하게는 해수에 니파야자 수액을 혼합하는 단계와, 상기 혼합된 혼합물을 염전에 공급하는 단계와, 상기 염전에 공급된 혼합물로부터 수분을 증발시켜 천일염 결정체를 채취하는 단계를 포함하는 것을 특징으로 한다.본 발명에 의하면, 천일염에 다량의 폴리페놀 및 영양성분들이 함유되도록 함으로써, 고품질의 천일염을 생산할 수 있는 장점이 있다. 또한, 해수로서 해양심층수를 사용함으로써, 중금속 등의 각종 오염물질이 없는 안전한 천일염을 생산할 수 있는 장점이 있다.
