The present invention relates to a method for producing jelly bean curd containing fast-fermented bean paste and a device for producing the same, wherein 0.7-7.6 wt% of fast-fermented bean paste powder is added in soybean milk in order to be coagulated in a jelly form. In particular, the method of the present invention comprises: a soybean milk producing step of washing and pulverizing soybeans, separating bean-curd dregs and boiling so as to obtain soybean water, filtering the soybean water into soybean milk at 90-100°C, rotating the soybean milk in a container maintained at vacuum, adding the soybean milk in a wrapper tube covered with a 160-mesh filtering sieve, and rotating the wrapper tube at 1,700 RPM so as to filter the soybean milk through a centrifuging technique, thereby forcibly discharging odors and moisture of the soybean milk through a filtering process, and obtaining soybean milk having a concentration of 12 brix a step of adding the soybean milk into an agitating container with a particular quantity in order to be agitated and mixed with 0.7-7.6 wt% of fast-fermented bean paste powder a packing step of adding a coagulant in the soybean milk mixed with the fast-fermented bean paste powder in order to be agitated for eight seconds and transferred into a packing box disposed on a conveyor by opening the bottom end of the agitating container before the soybean milk is completely coagulated and a molding step of applying steam at 90°C to bean curd contained in the packing box in order to be coagulated into a jelly type. A producing device which is relevant to the method of the present invention is used.본 발명은 청국장 분말을 두유에 0.7 ∼ 7.6중량% 첨가하여 젤리형태로 응고시킨 청국장이 함유된 젤리두부 제조방법 및 그 제조장치에 관한 것으로서 구체적인 것은, 대두를 세척하여 마쇄하고, 비지를 분리한후 끓여서 얻은 콩물을 여과하여 얻은 90 ~ 100℃의 두유를 진공상태를 유지할 수 있는 통속에 장치되어 회전하며, 160메쉬의 여과망이 씌워진 나팔관으로 투입하여 나팔관을 1700RPM으로 회전시켜 원심분리 방법으로 두유를 여과함으로써, 여과단계에서 두유속의 잡냄새, 수분을 강제 배출시켜 농도 12브릭스의 두유를 얻게한 두유제조단계와,상기 두유를 일정용량을 가지는 교반용기에 넣고 교반하면서 청국장분말 0.7 ~ 7.6중
