The present invention relates to a barely sprout germination device capable of adjusting humidity. As an environment in a germination room is formed as an optimal environment needed for germination of barely sprouts； humidity in the germination room can be measured； and, when excessive humidity is generated, the humidity can be effectively removed and adjusted to the proper humidity. So, germination disturbances such as mold on a germinated barely sprout caused by excessive humidity can be prevented.
