The present invention relates to a slowly digestible highly branched alpha-limit dextrin and to a production method thereof, and according to the production method of the slowly digestible highly branched alpha-limit dextrin of the present invention, it is possible to produce an alpha-limit dextrin having higher lipidability than in the prior art. In addition, the produced slowly digestible highly branched alpha-limit dextrin is composed of 12 to 17 glucose, and has a branched structure having one alpha-1, 6 bond per 3 to 4 alpha-1,4 bonds. The slowly digestible highly branched alpha-limit dextrin of the present invention exhibits high lipidability, can weaken the increase and decrease of postprandial blood glucose, and can be applied to diets for diabetic patients in a hypoglycemic manner. In addition, the slowly digestible highly branched alpha-limit dextrin can also be provided as a drink with high solubility.본 발명은 지소화성 고분지 알파 리밋 덱스트린 및 그 제조방법에 관한 것으로, 본 발명의 지소화성 고분지 알파 리밋 덱스트린의 제조방법에 따르면, 종래보다 지소화성이 높은 알파 리밋 덱스트린을 제조할 수 있다. 또한, 생산된 지소화성 고분지 알파 리밋 덱스트린은, 포도당 12~17개로 이루어져 있고, 3~4개의 알파-1,4 결합 당 1개의 알파-1,6 결합이 있는 분지구조를 가지는 것을 특징으로 한다. 본 발명의 지소화성 고분지 알파 리밋 덱스트린은 높은 지소화성을 나타내어, 식후 혈당의 증감을 약화시킬 수 있으며, 저혈당식으로 당뇨환자를 위한 환자식에 적용될 수 있다. 또한, 높은 용해도를 가져 음료로서 제공될 수 있다.
