A method for preparation of fiber drink with lemon polyphenols is disclosed herein to comprises steps as squeezing lemon to acquire a lemon pulp, inoculating soluble composite probiotics into the lemon pulp, fermentation of the lemon pulp with the soluble composite probiotics to effectively decompose and release polyphenols from the lemon pulp for obtainment of a finished product with a high amount of polyphenols, freeze drying the finished product and at last grinding the finished product into powder.
