PURPOSE: A temperature controlling device and a method thereof are provided to calculate a response delay of a control valve for controlling when the temperature difference of a retort is exceedingly generated. CONSTITUTION: Data is collected offline (S1). The responsiveness of a valve is measured for modeling an automatic valve (S2). Temperature set up data is collected (S3). The actual temperature inside a chamber of a sterilizer is taken (S4). The preset temperature (Tt) and the actual temperature (Ta) are compared to determine whether the temperature difference is within the tolerance range (S5). If the temperature difference between the preset temperature and the actual temperature is bigger than the allowed temperature range (ΔT), the valve response delay time (&thgr;) is measured for measuring the response delay time and the time constant (S6). The time constant of a system is measured (S7). A controller for controlling the response delay compensation of the valve is designed (S8). Actual data of the sterilizer is stored (S9). The end of the valve controlling work is checked. (S10).
