PROBLEM TO BE SOLVED: To provide a moisture adjustment method of cereals and a moisture accommodation system of cereals for making whole-grain cereals contain moderate moisture without debasing the quality of whole-grain cereals having a husk (e.g., nutrients contained in the whole-grain cereals disappear).SOLUTION: A moisture adjustment method of cereals includes: a decompression step of exhausting a treatment tank in which husked whole-grain cereals have been carried a pressure recovery step of diluting remaining air in the treatment tank by injecting steam into the treatment tank a re-deaeration step of increasing the degree of vacuum in the treatment tank by exhausting air in the treatment tank a temperature raising step of heating the whole-grain cereals to a temperature that does not debase the quality of the whole-grain cereals in the treatment tank (nutrients contained in the whole-grain cereals do not disappear) by injecting saturated steam into the treatment tank a dew condensation step in which the saturated steam liquefies to condensed water by attaching to the husk of the whole-grain cereals, and the condensed water penetrates into the inner surface in the husk and a final step of returning the inside of the treatment tank to an atmospheric pressure.COPYRIGHT: (C)2014,JPO&INPIT【課題】穀皮を有する全粒穀物の品質を落とす(例えば、全粒穀物に含まれた栄養素が消失する)ことなく、全粒穀物に適度な水分を含ませることができるようにした穀物類の水分調節方法及び穀物類の水分調節システムを提供する。【解決手段】この穀物類の水分調節方法は、殻皮付きの全粒穀物を搬入した処理槽内を排気する減圧工程と、処理槽内に蒸気を注入することによって処理槽内の残存空気を希釈化する復圧工程と、処理槽内の空気を排出することによって処理槽内の真空度を上げる再脱気工程と、処理槽内に飽和蒸気を注入することによって処理槽内の全粒穀物の品質を落とさない(全粒穀物に含まれた栄養素が消失しない)温度まで全粒穀物を加熱する昇温工程と、前記飽和蒸気が全粒穀物の殻被に付着することによって凝縮水に液化し、該凝縮水を殻被の内面に浸透させる結露工程と、処理槽内を大気圧に戻す最終工程とを含んでいる。【選択図】図2
