PURPOSE: A food additive is provided to offer an excellent inhibitory effect against adiposity resulted by a weight loss experiment and influence test to associated gene expression. CONSTITUTION: A solvent is added to washed, dried, and sliced Puerariae Radix for 1-200 times the amount of the total weight of a sample(w/w), and the Puerariae Radix is extracted for 2 hours to 1 week at 10-150 deg. C. Water and an ethanol mixed solvent are added into the extract, and precipitates are removed to obtain filtrate. The filtrate is centrifugated and protein precipitates are removed. The filtrate is dried, and condensed. The food additive contains Puerariae Radix extraction fraction water, in which glucoside is removed, as an active ingredient. The solvent is purified water, alcohol, low grade alcohol with 1-4 carbons, or a mixture thereof. The extraction comprises enfleurage extraction, hot water extraction, ultrasonic wave extraction, reflux extraction, etc.본 발명은 갈근 추출물을 유효성분으로 함유하는 비만증 예방 및 개선용 식품첨가물에 관한 것이다.
