The invention provides fermented milk such as stirred yogurt having suitable viscosity and thick texture and free of gritty texture upon eating and roughness in outward appearance, as well as a process for producing the same. Disclosed are a process for producing fermented milk having an average particle diameter of 10 to 20 µm and a viscosity of 8000 mPa·s or more, a process for producing fermented milk having an average particle diameter of 10 to 20 µm and a viscosity of 8000 mPa·s or more without adding a stabilizer or by adding a very small amount of a stabilizer, fermented milk having an average particle diameter of 10 to 20 µm and a viscosity of 8000 mPa·s or more which is produced by the above process, and fermented milk having an average particle diameter of 10 to 20 µm and a viscosity of 8000 mPa·s or more produced without adding a stabilizer or by adding a very small amount of a stabilizer, which is produced by the above process.希望能提供一種具有適當黏度及濃厚口感,且無粗糙口感及粗糙外觀之軟優酪乳等之發酵乳,以及能提供一種該發酵乳之製造方法。本發明係提供一種發酵乳之製造法,其特徵為製造平均粒子徑係10~20μm,黏度係8000 mPa‧s以上之發酵乳;本發明並係提供一種發酵乳之製造法,其特徵為以未添加安定劑或添加微量安定劑,而製造平均粒子徑係10~20μm,黏度係8000 mPa‧s以上之發酵乳;本發明另係提供一種發酵乳,其係以前述方法所製造之平均粒子徑10~20μm,黏度8000 mPa‧s以上之發酵乳,以及,以未添加安定劑或添加微量安定劑,所製造之平均粒子徑10~20μm,黏度8000 mPa‧s以上之發酵乳。
