PROBLEM TO BE SOLVED: To develop and provide a method for extracting a phospholipid or lysophospholipid which is safe and can be stably supplied inexpensively from a raw material which can be easily obtained and has high safety without using a reagent (especially chloroform) harmful to a human body and the environment.SOLUTION: In the method for extracting the phospholipid and/or lysophospholipid, lipid-containing particles dispersed in water obtained by mixing water with cereals and/or beans (especially seeds of rice and soybean) being a ground or pulverized raw material are recovered, in particular, the particles dispersed in water are recovered as cream-shaped precipitate in which the particles dispersed in water are aggregated.
