PROBLEM TO BE SOLVED: To provide a bulky-whipped meringue-like bubble-containing food product which is excellent in both stability and mouth-melt feeling of bubbles, and distributable as freezing.SOLUTION: The bubble-containing processed food with a specific gravity of 0.3-0.7 and a viscosity (20°C) of 10-90 Pa is manufactured by whipping slurry that contains albumen, milk serum, and a polysaccharide thickener, and heating it at 75-85°C for 0.5-5 minutes.COPYRIGHT: (C)2012,JPO&INPIT【課題】嵩高く泡立ったメレンゲ様の気泡入り加工食品であって、泡の安定性と口溶け感の双方に優れ、冷凍流通することができる気泡入り加工食品を提供する。【解決手段】卵白、乳清及び増粘多糖類を含有するスラリーを泡立て、75~85℃で0.5~5分加熱することにより比重0.3~0.7、粘度(20℃)10~90Paの気泡入り加工食品を製造する。【選択図】図1
