PURPOSE: A production method of sweetened jelly using aged Helianthus tuberosus is provided to offer blood sugar control, diabetes prevention, and weight loss functions by having low calories and sweetness.CONSTITUTION: Washed Helianthus tuberosus is dried at 50-70°C for 24-26 hours. The dried Helianthus tuberosus is aged at 90-98°C for 3-4 hours. The aged Helianthus tuberosus is dried at 55-80°C for 30-40 hours, and pulverized to obtain aged Helianthus tuberosus powder. 100 parts by weight of agar is mixed with 3,500-4,000 parts by weight of water, and the mixture is heated and concentrated at 90-150°C to obtain a 3-10%(w/w) agar solution. 35-55wt% of aged Helianthus tuberosus powder and 10-20wt% of 3-10%(w/w) agar solution are mixed and heated, and 15-25wt% of sugar and 5-20wt% of starch syrup are added to the mixture when the reaction temperature is at 90-150°C.
