1. An oil-in-water emulsion comprising: a. a water-containing continuous phase b. oil-containing discrete phase; ex. at least one low molecular weight surfactant; wherein the volume fraction of the discrete phase is from 60% to 67%; the emulsion has an average particle size of less than 0.2 μm; the low molecular weight surfactant is selected from the group consisting of a solid extract of quillaya, polysorbate and mixtures thereof; while a low molecular weight surfactant (LMW) is present in an amount of from 2 wt.% to 25 wt.% 2. The emulsion according to claim 1, in which the volume fraction of the discrete phase is from 62% to 65%. The emulsion according to claim 1, wherein the low molecular weight surfactant is selected from the group consisting of quillaya solid extract and polysorbate. The emulsion according to claim 1, wherein the low molecular weight surfactant is a quillaya solid extract and polysorbate. The emulsion according to claim 4, wherein the polysorbate is polyoxyethylene (20) sorbitan monostearate (Tween 60). The emulsion according to claim 1, in which the average particle size of the emulsion is less than 0.15 microns. The emulsion according to claim 1, in which at least 90% of the particles of the emulsion is not more than 0.2 μm. The emulsion according to claim 7, in which at least 90% of the particles of the emulsion is not more than 0.15 microns. The emulsion according to claim 1, which is stable, so that the average particle size remains less than 0.2 μm for at least 3 months.
