To provide a retort-packed rice-like food keeping a rice-like shape even after retort thermal sterilization treatment of the rice-like food and servable as it is as a food.
SOLUTION: The retort-packed rice-like food keeping the rice-like shape can be produced by extruding a semisolid material comprising 1-30 wt.% of starch and &le 20 wt.% of dextrin, 0.1-7 wt.% of a gelling agent, 1-20 wt.% of cellulose and 40-97 wt.% of water, cutting the extrudate to form granules, optionally eluting the dextrin, gelling the product to obtain the rice-like food having rice-like appearance and texture and adding 1-2 wt.% of a thickening polysaccharide and 68-75 pts.wt of water to 24-30 wt.% of the rice-like food and subjecting the mixture to retort thermal sterilization treatment.
