PROBLEM TO BE SOLVED: To provide a bread having a good eating texture by using a refrigerated bread dough and further a frozen bread dough.SOLUTION: Provided are: a bread dough obtained by refrigerating a sheet-shape dough; a bread obtained from said bread dough; and a production method of bread dough or bread comprising a step of making a dough finished with kneading, into sheet-shape, and a step of refrigerating said sheet-shape dough.
