After that the second stage of fermentation is carried out by rotating the chamber and simultaneously heating it, wherein the second fermentation step is carried out for 20–120 minutes while the chamber is heated to 50–70 °C and the speed of its rotation is 0.5–1.5 rpm. Additional fermentation of the leaves is carried out for 30–60 minutes, during which the heating of the chamber is stopped and oxygen is fed into it, while it is still rotating.
