PROBLEM TO BE SOLVED: To provide a fermented food production method and fermented food having stable physical properties in spite of containing whey protein and fat.SOLUTION: A method for producing a fermented food product containing whey protein and fat is provided which includes: a raw material preparation step of preparing a fermented food raw material solution at least containing whey protein and fat; a heating step of hearting the fermented food raw material solution to prepare a heat treated solution; and a fermentation step of fermenting a solution containing the heat treated solution, wherein the whey protein in the fermented food is 1.6% by mass or more based on the fermented food and the heat-denatured whey protein in the fermented food is 1.6% by mass or less with respect to the fermented food. A fermented food produced by the method for producing a fermented food according to the present technology is provided.SELECTED DRAWING: None
