A process of making meat sausage having taro (Colocasia esculenta) as extender comprising the steps: scrubbing a plurality of taro (Colocasia esculenta) roots under running water to remove dirt with a use of a scaper; boiling said taro in a pan for 20 minutes; peeling the outer covering of the taro; smashing said peeled taro in a bowl; mixing said smashed taro with ground meat, coarse Salt, anisado wine, pineapple juice, chopped garlic, ground pepper and refined sugar; curing said mixture inside a refrigerator for 20 minutes; wrapping said cured mixture in a sausage casing to obtain a sausage.
