PROBLEM TO BE SOLVED: To provide a retort apparatus which is a hybrid type having both functions of a hot water storage type and a spray type, allows, in one operation, the thawing of an object to be treated by the hot water storage type and the sterilization of the object to be treated by the spray type, and can reduce the time required for sterilization and save the amount of heat (energy) required for sterilization.SOLUTION: A retort apparatus 1 comprises: a thawing control part which makes a hot water supply part 100 supply a predetermined amount of hot water to a treatment tank 2 and a sterilization control part which, when a preset first time has passed after supplying the hot water by the thawing control part, discharges a part of the hot water stored in the treatment tank 2 or recovers it in a hot water supply part 100, and starts the spraying of the hot water from a hot water spraying part 200 to the treatment tank 2.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2018,JPO&INPIT【課題】貯湯式とスプレー式の両方の機能を有するハイブリッド型のレトルト装置において、一回の操作で、被処理物の解凍を貯湯式で行い、被処理物の殺菌をスプレー式で行うことを可能にするとともに、殺菌に要する時間短縮及び殺菌に要する熱量(エネルギー)の節約を可能とするレトルト装置を提供すること。【解決手段】レトルト装置1は、熱水供給部100から処理槽2に所定量の熱水を供給させる解凍制御部と、解凍制御部により熱水が供給された後予め設定された第1時間が経過した場合に処理槽2に貯留された熱水の一部を排出又は熱水供給部100に回収し、熱水噴霧部200から処理槽2に熱水の噴霧を開始させる殺菌制御部と、を備える。【選択図】図1
