A horizontal chocolate tempering plate comprises is a circular piece of conductive material such as granite, marble, food grade compound or metal, sufficient to be able to draw the heat from molten chocolate and cool the material down by the action of an operator spreading and gathering the molten chocolate on the horizontal conductive surface 1. Rotation of the plate allows for deflection of liquid chocolate by hand tools such as a palette knife or scraper. The rotating plate may be driven by a motor or by manual power, such as a treadle wheel. The conductive plate may be set at such a height above the work surface that the "feed bowl" or receptacle can be positioned 3 to receive the cooled chocolate. The action of controlled revolution of the circular conductive plate allows a semi-skilled operator to hand temper with ease.
