The use of sugarcane juice as an alternative substrate for the production of bovine hc5 increased the volumetric productivity of the peptide 4 times. After growth in culture medium plus sugarcane juice, the cells had a volumetric productivity of 2560 u / ml / h while in the control treatment using glucose as carbon source (16 g / l) the volumetric productivity was 640 ua / ml. ml / h. The use of bovine hc5 inhibits growth and reduces the cell viability of alicyclobacillus acidoterrestris dsmz 2498 in different juices.
