The present invention provides a pepper stem end remover which does not damage the body of a pepper and perfectly separate the stem end of the pepper from the body of the pepper. The pepper stem end remover comprises: a hopper for storing a pepper and a conveyor for arranging a pepper at the bottom thereof, and moving the pepper to a first cutting unit. In the first cutting unit, a chain is formed to be rotated by a chain gear, wherein the chain has a basket installed therein to contain and move the pepper. A roller for holding the stem end of the pepper contained in the basket is installed on the chain, and is rotated by the chain gear. A cutter for removing the stem end of the pepper is installed right before a U-turn point. A second cutting unit starts from the bottom of the U-turn point for constituting the first cutting unit. In the second cutting unit, a chain is formed to be rotated by a chain gear, wherein the chain has a basket installed therein to contain and move the pepper. A roller for holding the stem end of the pepper contained in the basket is installed on the chain, and is rotated by the chain gear. A cutter for removing the stem end of the pepper is installed right before a U-turn point. When the stem end of a pepper is separated from the body of the pepper supplied form a pepper supplying unit, the stem end of the pepper can be completely cut irrespective of the position of the pepper, so red pepper powder having excellent quality is provided. The body of the pepper and the stem end of the pepper are separated while a basket and a roller are moved, so a simple structure is ensured.
