PURPOSE: A diet beverage using lentinus edodes, and a producing method thereof are provided to produce the diet beverage by hot-water extracting the lentinus edodes, salicornia herbacea, and benincasa hispida. CONSTITUTION: A producing method of a diet beverage comprises the following steps: hot-water extracting lentinus edodes to obtain a lentinus edodes extract(S10)； hot-water extracting salicornia herbacea to obtain a salicornia herbacea extract(S20)； hot-water extracting benincasa hispida to obtain a benincasa hispida extract(S30)； mixing 10~30wt% of lentinus edodes extract, 1~5wt% of salicornia herbacea extract, 10~30wt% of benincasa hispida extract, 5~20wt% of apple concentrate, 1~5wt% of jujube extract, 0.1~2wt% of anhydrous citric acid, 0.02~0.05wt% of vitamin C, 0.01~0.02wt% of grapefruit seed extract, 0.1~1wt% of sucralose, and 30~60wt% of purified water to obtain a mixed composition(S40)； and sterilizing the mixed composition(S50).본 발명은 표고버섯을 이용한 다이어트 음료 및 그 제조방법에 관한 것으로서, 더욱 상세하게는 표고버섯을 주원료로하여 함초, 동아, 사과농축액, 대추농축액, 무수구연산, 비타민 C, 자몽종자추출물, 수크랄로스 등을 조성 비율에 따라 일정량씩 첨가하여 표고버섯 특유의 냄새(역겨운 냄새)를 없애고 누구나 음용할 수 있도록 만든 표고버섯을 이용한 다이어트음료 및 그 제조방법 관한 것이다.본 발명의 일 측면에 따른 표고버섯을 이용한 다이어트음료는 표고버섯추출물을 10 내지 30중량%, 함초추출물을 1 내지 5중량%, 동아추출물을 10 내지 30중량%, 사과농축액을 5 내지 20중량%, 대추농축액을 1 내지 5중량%, 무수구연산을 0.1 내지 2중량%, 비타민 C를 0.02 내지 0.05중량%, 자몽종자추출물을 0.01 내지 0.02중량%, 수크랄로스를 0.1 내지 1중량%, 정제수를 30 내지 60중량% 포함한다.
