PROBLEM TO BE SOLVED: To provide a food product dryer capable of providing a safe dried product, reducing a drying time, and controlling a production cost without decreasing the value of a food product and without degrading the same.SOLUTION: The food product dryer is comprised of a plurality of dew-point saturated air generation mechanism 1 and a plurality of drying chambers 35. The dew-point saturated air generation mechanism 1 comprises a water tank part 3 configured to be able to control water temperature at a prescribed level, a cylinder part 11 communicating with the water tank part 3, an air delivery part 23 introducing air into the cylinder part 11 with an air duct connected to the lower part of the cylinder part 11, and a high pressure water spray part 13 disposed in the cylinder part 11 and configured to be able to generate dew-point saturated air comprising mist or fine water droplets by using air introduced from the air delivery part 23 by spraying high pressure water controlled at a prescribed temperature in the water tank part 3 in the direction of the inner wall of the cylinder. The drying chamber 35 dries a food product to be dried stored therein to a prescribed moisture content by reheating the dew-point saturated air comprising mist or fine water droplets further to a prescribed temperature whereby controlling the temperature and humidity in the drying chamber at a prescribed level.SELECTED DRAWING: Figure 2COPYRIGHT: (C)2019,JPO&INPIT【課題】食品の商品価値の低下や劣化を招くことなく、安全な乾燥製品の提供、乾燥時間の短縮化、生産コストの抑制が可能な食品の乾燥装置を提供する。【解決手段】露点飽和空気発生機構1は、所定水温に管理可能に構成された水槽部3と、水槽部3と連通して備えられた筒部11と、送風ダクトが筒部11の下方に連結し、筒部11内に向けて空気を導入する空気送出部23と、筒部11内に備えられ、水槽部3にて所定温度に管理された水を筒内壁方向に向けて高圧散水し、空気送出部23から導入された空気によって微細水滴を含むミスト状の露点飽和空気を形成可能に構成された高圧散水部13と、からなり、乾燥庫35は、微細水滴を含むミスト状の露点飽和空気を、さらに所定温度に再加熱して庫内を所定温度・所定湿度とすることで庫内に収容した対象食品を所定の含水率になるまで乾燥処理させる。【選択図】図2
