The present invention relates to processed food manufactured by using concentrated liquid of low grade oriental melons and a method for manufacturing the same. A concentrated oriental melon liquid is produced by using low grade oriental melons. Oriental melon jam, oriental melon chili pepper sauce, and an oriental melon Vermont beverage are manufactured by using the produced concentrated oriental melon liquid. Evaluation for quality and palatability of the manufactured processed oriental melon food is performed. As a result of the evaluation, not only is the processed oriental melon food containing the concentrated low grade oriental melon liquid provided but also the value of the processed oriental melon food is increased in aspects of nutrition, functionality, and quality.
