The present invention provides a method for manufacturing vinegar pickled sea cucumber comprising: a steamed sea cucumber manufacturing step of manufacturing steamed sea cucumber by removing intestines of live sea cucumber and then steaming the same for 1 to 5 minutes with hot water of 80 to 100°C; a low temperature aged sea cucumber manufacturing step of manufacturing low temperature aged sea cucumber by aging the steamed sea cucumber for 12 to 36 hours at a low temperature of 2 to 6°C; a first seasoning step of seasoning the low temperature aged sea cucumber with a first seasoning solution; and a second seasoning step of seasoning the low temperature aged sea cucumber seasoned with the first seasoning solution with a second seasoning solution containing vinegar. The vinegar pickled sea cucumber has improved taste and storability.본 발명은 활해삼의 내장을 제거 후 80 내지 100℃의 열수로 1 내지 5분간 자숙하여 자숙해삼을 제조하는 자숙해삼 제조단계; 상기 자숙해삼을 2 내지 6℃의 저온으로 12 시간 내지 36 시간동안 숙성시켜 저온숙성 해삼을 제조하는 저온숙성 해삼 제조단계; 상기 저온숙성 해삼을 1차 조미액으로 조미하는 1차 조미공정 단계; 및 상기 1차 조미액으로 조미된 저온숙성 해삼을 식초를 포함하는 2차 조미액으로 조미하여 초절임하는 2차 조미공정 단계를 포함하는, 초절임 해삼 제조방법을 제공한다.
