PROBLEM TO BE SOLVED: To provide an instant buckwheat porridge which can be simply and easily cooked to an edible state in a short time with reduced energy costs required for heating and freeze-drying, and can be efficiently processed through processing for reducing cooking time at a high yield rate with a reduced amount of waste generated in the processing step.SOLUTION: The instant buckwheat porridge includes seeds of Fagopyrum tataricum with the skin removed and the internal starch pregelatinized. The granular form of the seeds are retained by the pregelatinized starch. A pressure to crush the surface is applied to the seeds, so that an infinite number of crush marks are formed all over the surface. Further, the compressed surface under pressure has a non-planar shape.
