PURPOSE: Fried dumpling and a producing method thereof are provided to insert rice cake into a dumpling skin with a filling to enable an eater to eat the dumpling with the rice cake, and to offer the chewy texture of the rice cake to the dumpling. CONSTITUTION: A producing method of fried dumpling comprises a step of inserting 5~10parts of rice cake dough(30) by weight and 12~18parts of dumpling filling by weight into 5~10parts of dumpling skin y weight, and molding. The rice cake dough contains 30~50parts of glutinous rice flour by weight, 5~15parts of modified starch by weight, 1~5parts of rice powder by weight, 1~5parts of flour by weight, and 40~50parts of purified water by weight.본 발명은 만두피 내부에 떡생지와 만두소를 충진하여 조리후 섭취할 때 군만두의 바삭바삭한 식감과 찰떡의 부드러우면서도 쫄깃쫄깃한 식감을 함께 느낄 수 있는 찰떡군만두에 관한 것이다.
