The present invention relates to a method of preparing a pickled Prunus mume product by using berries. More specifically, the pickled Prunus mume product preparing method includes: a first process of removing moisture on the surface of yellow Prunus mume after harvesting and washing the Prunus mume； a second process of adding salt to the yellow Prunus mume without moisture to pickle the yellow Prunus mume for 5-50 days； a third process of obtaining the yellow Prunus mume pickled in salt by drying the yellow Prunus mume from the salt after the second process and removing moisture from the surface thereof； a fourth process of washing berries with water separately and removing the moisture therefrom； a fifth process of adding 70-100 parts by weight of sugar to 100 parts by weight of the berries without moisture from the fourth process； a sixth process of obtaining sugar-pickled berries by aging the mixture of the berries and sugar in the fifth process for 30-60 days； and a seventh process of mixing the yellow Prunus mume pickled in salt from the third process and the sugar-pickled berries from the sixth process and aging the mixture. The pickled Prunus mume product including the berries has high palatability due to low salinity while having an increased anthocyanin content.본 발명은 베리류를 이용한 매실 절임의 제조 과정에 관한 것으로, 보다 자세하게는 황매실을 수확하여 물로 세척한 후 황매실의 표면에 묻은 수분을 제거하는 단계(1공정)； 상기 1공정의 수분을 제거한 황매실에 소금을 첨가하여 5일 내지 50일 동안 절임하는 단계(2공정)； 상기 2공정의 소금에 절임한 황매실을 건져낸 후 표면의 물기가 남지 않도록 건조하여 염절임 된 황매실을 수득하는 단계(3공정)； 별도로, 베리를 물로 세척하여 수분을 제거하는 단계(4공정)； 상기 4공정의 수분을 제거한 베리 100중량부에 설탕을 70중량부 내지 100중량부를 첨가하는 단계(5공정)； 상기 5공정의 베리 및 설탕 혼합물을 30일 내지 60일간 숙성하여 당절임 된 베리를 수득하는 단계(6공정)； 및 상기 3공정의 염절임 된 황매실에 상기 6공정의 당절임 된 베리(berry)를 혼합하여 숙성시키는 단계(7공정)；를 포함하는 제조방법이다. 이를 통해, 염도가 낮아 기호도가 높고, 안토시아닌 함량이 증가된 베리류를 포함하는 매실 절임을 제조할 수 있다.
