According to the present invention, by providing the phosphate phosphate-substitute composition including egg shell calcium and shell calcium, provided are the meat products which maintain the quality characteristics of meat products while substituting existing synthetic phosphate, and a manufacturing method thereof. In addition, provided is the meat products in which natural minerals are enhanced by containing calcium, potassium and magnesium, which are useful ingredients of egg shell and shell.
