PROBLEM TO BE SOLVED: To provide a foliar-surface spraying agent strongly lowering a nitric acid concentration in edible parts of a plant and simultaneously retaining the low nitric acid concentration state for a longer time. SOLUTION: The foliar-surface spraying agent for reducing nitric acid remaining in a plant body is obtained by saturating and dissolving a magnesium salt in an aqueous solution of a saccharide-fermented organic acid rich in peptide nitrogen or urea and adding glycerol and aminobutanoic acid and/or methionine in a prescribed amount to the mother liquor.
