The present invention provides wheat grain of the triticum aestivum species, the grain comprising: i) mutations in each of its ssiia genes such that the grain is homozygous for a mutation in its ssiia-a gene, homozygous for a mutation in its gene. ssiia-b gene is homozygous for a mutation in its ssiia-d gene, wherein at least two of the mutations in said ssiia genes are null mutations, ii) a total starch content comprising an amylose content and an amylopectin content, iii ) a fructan content which is increased relative to wild-type wheat grain on a weight basis, preferably between 3% and 12% by weight of the grain, iv) a ß-glucan content, v) an arabinoxylan content, vi) a cellulose content. The grain has a weight of between 25 mg and 60 mg, and the amylose content is between 45% and 70% on a weight basis of the total starch content of the grain as determined by the iodine binding assay. the amylopectin content on a weight basis is reduced with respect to wild type wheat grain, and each of ß-glucan content, arabinoxylan content and cellulose content are increased with respect to wild type wheat grain by a weight basis such that the sum of the fructan content, ß-glucan content, arabinoxylan content and cellulose content is between 15% and 30% of the grain weight.a presente invenção provê grão de trigo da espécie triticum aestivum, o grão compreendendo: i) mutações em cada um de seus genes ssiia de maneira tal que o grão é homozigótico para uma mutação em seu gene ssiia-a, homozigótico para uma mutação em seu gene ssiia-b e homozigótico para uma mutação em seu gene ssiia-d, em que pelo menos duas das mutações nos ditos genes ssiia são mutações nulas, ii) um teor total de amido compreendendo um teor de amilose e um teor de amilopectina, iii) um teor de frutano que é aumentado com relação ao grão de trigo tipo selvagem em uma base de peso, preferivelmente entre 3% e 12% do peso do grão, iv) um teor de ß-glucano, v) um teor de arabinoxilano, vi) um teor de celulose. o gr
