The invention relates to organic pigments, in particular to a carminic acid complex compound for colouring food products. The inventive carminic acid complex compound is embodied in the form of the interaction product of carminic acid and the organic salt of a divalent metal MX, wherein M is a divalent metal selected from a group consisting of Ca, Mg, Sr and Ba, X is the anion of an organic acid selected from a group comprising GliP―, AcO―, Cit― and Lact―, wherein GliP― is a glycerine-phosphoric acid anion, AcO- is acetic acid anion, Lact― is milk acid anion and Cit― is a citric acid anion. Said invention also relates to a method for producing the carminic acid complex compound. A food product and beverage containing said carminic acid complex compound in the form of a pigment are also disclosed. Said invention makes it possible to produce a stable intensive coloration of a wide range of food products without increasing pigment consumption.
