The present invention provides a liquid for flesh processed food, comprising an ingredient (A) of a starch having a degree of swelling in cold water of more than 1 and less than 8; an ingredient (B) of a starch having a degree of swelling in cold water of 8 or more and 40 or less; and an ingredient (C) of one or more selected from the group consisting of a starch other than the above ingredient (B) and dextrin; wherein a dextrose equivalent of the ingredient (A) is more than 0 and less than 0.8 based on the converted value of dried product, and a dextrose equivalent of the ingredient (C) is 0.8 or more and 10 or less based on the converted value of dried product.本發明提供一種食用肉加工用液,其包含:成分(A):冷水膨潤度為超過1且未滿8之澱粉;成分(B):冷水膨潤度為8以上且40以下之澱粉;及成分(C):自除上述成分(B)以外之澱粉及糊精所組成之群選擇之1種或2種以上;且成分(A)之右旋葡萄糖當量以乾物換算計為超過0且未滿0.8,上述成分(C)之右旋葡萄糖當量以乾物換算計為0.8以上且10以下。
