The invention is related to a manufacturing method of ice product, especially to manufacturing method of binding a processed dried persimmon fruit and ice product. The internal space of the dried persimmon can be utilized to squeeze the fruit flesh in the fruit toward the surrounding, thereby generating vacant containing-space. The ice product can be filled into the containing space inside the dried persimmon, and the stalk head can be covered on the fruit of the dried persimmon for forming the ice product of dried persimmon. The ice product of dried persimmon needs to be set in the cryogenic storage space for being preserved at the low temperature of -15 to -30 DEG C degree. Thus, the purpose of manufacturing ice product of dried persimmon can be achieved, the storage life of dried persimmon can be prolonged, the mouth feeling of dried persimmon can be changed, and the economic value can be raised.
