PROBLEM TO BE SOLVED: To provide a vegetable preparation device reducing a used amount of compressed-air, and enabling sufficiently obtaining a removal effect of unnecessary leaves and dirt.SOLUTION: A vegetable preparation device 1 removes unnecessary leaves and dirt adhering to a plant root of leaf vegetables 2 by spraying compressed-air thereto. A pair of ejection nozzles 8 and 8 vertically opposing are arranged, and the ejection nozzle 8 has a cylindrical external cylinder 11, and a cylindrical internal cylinder 12 arranged coaxially with the external cylinder 11 inside the external cylinder 11 supplied with compressed-air in the inside, and rotating in the external cylinder 11. The external cylinder 11 is formed with ejection ports 21 penetrating a side wall, and the internal cylinder 12 is provided with compressed-air passage ports 22 in the nearly same arrangement as the ejection ports 21, penetrating the side wall, on one place or a plurality of places in the rotation direction.
