PROBLEM TO BE SOLVED: To provide a green tea drink enhanced in sweetness and richness inherent to a pulverized tea leaf by using the pulverized tea leaf and preparing the pulverized tea leaf having high flavor while retaining characteristics of the green tea drink rich in nutrition, and flavor and taste by retaining nutrition constituents and flavor constituents with the pulverized tea leaf in the green tea drink blended with the pulverized tea leaf containing the pulverized tea leaf.SOLUTION: Tea leaves obtain by cultivating with covers are subjected to kneading to produce an unrefined tea, and a pulverized tea leaf having a median diameter of 1-16 μm is prepared using a ball mill, and a highly flavored green tea drink enhanced in sweetness and richness is produced and provided by containing the pulverized tea leaf. In preparation of the pulverized tea leaf when the highly flavored green tea drink of the present invention is produced, a highly flavored green tea drink enhanced in sweetness and richness inherent to a pulverized tea leaf can be provided by drawing the flavor and taste of a raw material tea leaf, further by varying and strengthening a tasting constituent in the tea leaf obtained by the pulverization treatment.SELECTED DRAWING: NoneCOPYRIGHT: (C)2017,JPO&INPIT【課題】粉砕茶葉を含有させた粉砕茶葉入り緑茶飲料において、粉砕茶葉による栄養成分の保持と、香味成分の保持による、栄養及び香味・味覚に富んだ緑茶飲料の特性を保持しつつ、更に、高香味の粉砕茶葉を調製し、該粉砕茶葉を用いることにより、該粉砕茶葉由来の甘味とコクを強化した高香味緑茶飲料を提供すること。【解決手段】本発明は、被覆栽培した茶葉を揉捻工程を経て製造した荒茶を、ボールミルを用いて、メディアン径が1~16μmとなるように粉砕した粉砕茶葉を調製し、該粉砕茶葉を含有させることにより、粉砕茶葉由来の甘味とコクを強化した高香味緑茶飲料を製造し、提供する。本発明の高香味緑茶飲料の製造における、粉砕茶葉の調製においては、原料茶葉の香味・味覚を引き出し、更に、粉砕処理による茶葉中の呈味成分の変化、強化により、粉砕茶葉由来の甘味とコクを強化した高香味緑茶飲料を提供することができる。【選択図】なし
