The present invention relates to a chili pepper drying apparatus. The present invention comprises: a hopper part storing chili peppers； a defrosting part formed on a side of the hopper part； a washing part formed on a side of the defrosting part； an inclined conveyor inclined upwards on a side of the washing part； a distributing device installed at an end of the inclined conveyor； and a drying device formed on a side of the distributing device. The frozen chili peppers stored in the hopper part are defrosted through the defrosting part, and then, the washing part sprays water to the defrosted chili peppers to remove dirt on the chili peppers while washing the surface of the chili peppers. The washed chili peppers are transferred to the inclined conveyor while being exposed to infrared light to remove moisture from the chili peppers. The drained chili peppers are distributed evenly into the drying device through the distributing device, and then, hot air is applied to the chili peppers transferred to the drying device to automatically dry the chili peppers.
