Disclosed are a method of serving hot soup an apparatus (15) and a service counter arrangement. The disclosure notes that soups such as Pho involve pouring broth over rice noodles and other ingredients but the preparation and service of Pho is labour intensive and slow. Inconsistencies in soup can occur by removal of a lid of a pot to serve the soup as this allows evaporation thus causing the soup to reduce. The method includes the steps of holding the soup in a vessel (15) that is at least predominantly closed to at least impede evaporation. The soup is dispensed from the vessel (15), via an outlet tap (15c) under gravity, whilst the vessel (15) remains at least predominantly closed to at least impede evaporation.
