The present invention relates to a method for producing a colored rice yeast by using organic solvent extraction. More specifically, the present invention relate to a method for producing a colored rice yeast by using organic solvent extraction, a yeast produced through the method, and a colored rice fermented wine produced through the yeast. When a yeast is produced after fat-soluble components of colored rice are removed by using organic solvent extraction, an alcohol generating function and chrominance are remarkably improved compared to when yeast is produced without organic solvent extraction. Thus, the method for producing a colored rice yeast by using organic solvent extraction according to the present invention can produce a colored rice yeast having an excellent alcohol producing function and excellent chromaticity compared to a conventional method.본 발명은 유기용매 추출을 이용한 유색미 술덧의 제조방법에 관한 것이다. 더욱 상세하게는 유기용매 추출을 이용하는 유색미 술덧의 제조방법, 상기 제조방법으로 제조된 술덧, 상기 술덧으로 제조된 유색미 발효주에 관한 것이다. 유기용매 추출을 이용하여 유색미의 지용성 성분들을 제거한 후 술덧을 제조하면, 유기용매 추출 없이 제조했을 때보다 알코올 생성능 및 색차가 현저히 증가하는 바, 유기용매 추출을 이용한 본 발명의 유색미 술덧 제조방법은 종래의 방법보다 알코올 생성능 및 색도가 우수한 유색미 술덧을 제조할 수 있다.
