The method includes placing a plurality of shellfish (2) inside a substantially flexible liquid permeable net (1) having at least one open end (3), then closing the open end, or ends, of the net, then twisting the net such that the shellfish are compacted under tension and are prevented from opening. Tension is then maintained on the net and the shellfish are cooked by steaming or boiling while held in the net. An apparatus for holding and tensioning the net by twisting is also provided.
