PROBLEM TO BE SOLVED: To provide a treatment method and device for animal and plant residue capable of reducing a moisture content of the animal and plant residue having relatively high moisture contents in a short period of time without using additional heat energy such as fossil fuel.SOLUTION: A treatment method for animal and plant residue comprises a ventilated fermentation process which controls, when aerobically fermenting a treatment object formed by accumulating the animal and plant residue by aerating oxygen-containing gas therein, a ventilation volume of the oxygen-containing gas in a range not less than 120 liters per minute and not more than 900 liters per minute for 1 mof the treatment object in accordance with an internal temperature thereof.【課題】化石燃料のような付加的な熱エネルギーを用いることなく、比較的含水率の高い動植物残渣の含水率を短時間で低減することができる動植物残渣の処理方法および処理装置を提供することを課題とする。【解決手段】動植物残渣が堆積されてなる処理対象物内に、酸素含有ガスを通気して処理対象物を好気発酵させるに際し、処理対象物の内部温度に応じて酸素含有ガスの通気量を処理対象物１ｍ3当たり１２０Ｌ／分以上９００Ｌ／分以下の範囲で調節する通気発酵工程を備えることを特徴とする。【選択図】図１
