PROBLEM TO BE SOLVED: To provide a mass production method of knife-cut noodle having an approximately crescent-shaped cross section of noodle line with excellent texture, which allows a plurality of noodle lines to be stably cut at the same time.SOLUTION: Means includes: the dough stuffing step (1) of stuffing dough into a plurality of strip-shaped molds opened in a die plate and passing a part of the dough to the rear face of the die plate, and the blade sliding step (2) of sliding a blade along the mold on the rear face so as to cut the dough passed through the mold into noodle lines. Means further includes the position shifting step (3) of separating the mold and the dough every time after (1) and (2) and shifting the position for the next (1) to a position different from the position for the prior cutting in (2) so as to repeat (1), (2), and (3).
